Roast them in a 375-degree oven for four minutes. Warm up the leftover steak cut into bite-sized pieces. Add the steak and scallions to your favorite greens. 3. Beet-Tomato Salad

Start by roasting two pounds of beets in a 400-degree oven for 75 minutes. When cooked, rub them to remove the skins. Then, chop up two pounds of tomatoes into bite size pieces. Chop the beets and add them to the tomato mixture. Throw in a pint of orange cherry tomatoes. Add 1/4-cup cilantro leaves. Sprinkle 1/4-cup feta cheese over the top. Serve with your favorite vinegar-oil dressing.

4. Pickled Beet Salad

Starting with a bag of coleslaw mix makes this pickled beet salad go together very quickly. Combine the mixture with two slices of rye bread cut into bite-sized pieces, 1/4-cup sour cream, three tablespoons horseradish, and two tablespoons Dijon mustard. Toss in four cups of baby spinach and four ounces Havarti cubed cheese. Add one-half pound diced deli-style roast beef and 3/4-cup pickled beets. Toss it all together.
